Butternut Squash and Carrot Soup

This recipe comes from the Family Circle Magazine. I found this recipe years ago and it's always been so yummy. It's delicious and creamy, and such a nice quick meal to have.


Ingredients:


1 large Onion

3 cloves of Garlic, whole

1 Butternut Squash (about 2 1/2 lbs), peeled seeded and cut into 1 inch pieces

1/2 pound Carrots, peeled and cut into 1 inch pieces

2 TBLS Olive Oil or Avocado Oil

3/4 tsp Salt

1/4 tsp Black Pepper

4 cups Reduced Sodium Chicken Broth

1 TBLS Coconut Sugar

1/4 tsp Ground Nutmeg


Directions:


  1. Heat Oven to 425 degrees.

  2. Toss Vegetables with oil, 1/4 tsp. salt and 1/8 tsp. pepper.

  3. Spread veggies on a baking sheet, cover with foil and bake for 15 minutes.

  4. Turn over the veggies and bake another 15 minutes.

  5. Check the veggies with a fork. If they are not ready, give them another 10 minutes.

  6. Once the veggies are soft, you can transfer 1/2 of them into a food processor.

  7. You will need to do this in 2 batches because the food processor can't handle all 4 cups of chicken broth with all the veggies.

  8. Puree half the veggies with 2 cups of chicken broth.

  9. Once it's smooth, pour it into a pot.

  10. Repeat the process with the remaining veggies and chicken broth.

  11. Once you have everything pureed, and in the pot, you can start adding the rest of your spices.

  12. Stir in coconut sugar, nutmeg, and remaining 1/4 tsp salt and 1/8 tsp of pepper.

  13. Bring it to a simmer, and then you can serve and enjoy!

  14. You can stop here, or take it one step further. I like to have a really smooth consistency, so I transfer the soup into my nutri bullet and blend it until it's super smooth. You don't have to do this step, but I prefer a creamier texture.

  15. 1 large Onionive Oil or Avocado OilSugarSugarugargararrdium Chicken Broththh Avocado Oilill cut into 1 inch piecessd and cut into 1 inch piecessome turkey bacon and break it up and sprinkle on top for a little crunch.
