Taquitos

This recipe is very flexible. You can customize it as you want. The number of tortillas depends on how many taquitos you will be making. The filling is up to you.


Ingredients:


Siete Tortillas

Meat of choice

Seasoning of choice

Avocado Oil


Extras:


Avocado

Chopped onions

Shredded lettuce

Pico De Gallo (if you're cleared for tomatoes)


Directions:


Prepare the meat:

If you have leftovers, feel free to use that. Otherwise, you can boil some chicken, or cook up some ground turkey. Season with salt and pepper or the seasoning of your choice.


Normally, you might mix the meat with sour cream or cream cheese. Instead, use the avocado. Mash the avocado and mix it with the chicken or turkey. You can also mix in the onions at this point.


Rolling the taquitos:

Lay out the tortillas on a baking tray and put about a spoonful of the filling in the center of each tortilla. Roll them up and set aside.


  • Heat a skillet to medium high heat.

  • Add the avocado oil.

  • Start putting the taquitos in the skillet seam side down.

  • You can cook 2-4 at a time depending on the size of your skillet.

  • Let them cook for a minute or two and then flip and cook another couple of minutes.

  • Line a baking sheet with paper towels.

  • Placed the finished taquitos on the paper towel line baking sheet.


Serve with guacamole, or pico de gallo.



We happened to have some steak that we cooked up. And we were trying to be quick about it, so we only rolled up the meat by itself.
